Meal Planning and More....

We love to cook here! But lately we've been at a loss as to what to eat.. So we decided to really try a nail down a menu. I figure this well help with budget, and with the pre-dinner panic that usually sets in around 3:00. We normally eat at 5:30, except on Mondays that is bible study night and we share a meal at 6:00pm with others. :)

Meal planning is hard work, especially when you have a large family. But I think it's essential!!

We also have created some theme nights. To help with the meal planning.

Our Menu for the next two weeks:

Monday: Soup Night-Pasta Fagoli with homemade bread.
Tuesday: Chicken Pot Pie
Wednesday: Pasta with Homemade sauce/gravy.
Thursday: Honey Mustard Chicken
Friday: Pizza Night
Saturday: Sausage, Peppers and Onions
Sunday: Roast Beef, Potatoes and Veggies, we eat early on Sunday around 3ish.

Monday: Soup Night-Chili Mac N Cheddar Soup
Tuesday: Breakfast for dinner
Wednesday: Penne ala Betsy
Thursday: Pork Loin w/veggies
Friday: Pizza Night
Saturday: Homemade Subs
Sunday: Baked Ziti.

While away camping this weekend we bought a couple of those frozen pasta meals that you just heat in the skillet and eat.




I am determined to make these from scratch to keep on hand for quick lunches or dinners on busy nights. I'll let you know how they turn out. :)
I would love to expand my freezer cooking as well. So I'm looking for good meals that freeze well, and still taste good after you cook them.

So we have Soup Night, Pasta Night and Pizza Night. Sunday is a family dinner served early in the afternoon. I may make Saturdays either breakfast for dinner, or Crockpot Night, we are usually so busy on a Saturday and I'm exhausted at the end of the day so we need something simple. I'm hoping by having the theme nights it will simplify the menu planning. Since we do make everything from scratch, I'd like to keep the meal planning part easy! :)

  1. Let me know how this turns out. I've made stuffed shells and they kept well in the freezer and tasted better then they did the day I made them, :)

  2. I'd love to meal plan, but can't seem to get more than 2 nights figured out. And where do you find the time to prepare them? I think that's what deters me, the prep takes forever and I don't have the time to be able to cook, create, heat, eat, freeze and repeat...ya know! At a loss!
