Cast of Characters:
2 Medium Butternut Squash- peeled and cut in chuncks
1 medium onion- Diced
5 Tart apples- cored and cut up
quart vegetable stock 

In a large heavy duty pot, I use my 
pour some olive oil and throw in the diced onions. Stick it in the oven at 350* 
Bake for 20 mins. until onion soften. 
Toss in squash and apples and veggie stock
Bake for another 40 mins, until everything is soft. 

WARNING: Your house will smell amazing at this point and will start to rouse people from their usual hangouts! 

Once everything is soft.. remove from oven. pull out the trusty ol stick immersion blender and have at it. 

You may want to add some heavy cream and cinnamon! 
Oh MY MY MY is it delicious!!!

Cheese Steak Stuffed Peppers

Bell Peppers ( I used Red)
Roast Beef
Provolone
onions
garlic
mushrooms

split the peppers in half, remove seeds.

sauté up onions, garlic and mushrooms in olive oil/butter mix

Cut the Roast beef in strips


Put peppers in oven at 350 for 10 mins while sautéing up the rest of the stuff

Remove, Drain water from peppers.

Lay a slice of provolone in bottom of pepper, fill with Roast Beef/onion mixture, layer another slice of provolone on top

Bake 350* 20 mins!

Fantastic!!!

























Snow Cream

We are getting hit with snow storm after snow storm! :) We've made this and it's delicious, tastes better then Turkey Hill my kids say.

10 Cups Snow
1 Can sweetened condensed milk
2 teaspoons vanilla..

Mix and eat!! :)






















Chicken Corn Chowder           

1     whole chicken/ or two large chicken breast cooked and shredded.
1 bay leaf                                                


2 tablespoons butter                                                   


1 onion, diced


3 shallots, diced                                                 


2 cubes chicken bouillon, crumbled


2 tablespoons dried parsley


salt and pepper to taste


2 potatoes, peeled and diced


1 1/2 cups frozen corn kernels
                

2 tablespoons heavy cream

This is a favorite around here. We omit the bay leaf, use a full pound of bacon!






Pasta Fagoli

This is a winter favorite around here! You can easily add/subtract what veggies you like or don't like..

2 large can diced tomatoes (Italian style)
4 large cans white beans
12 cups chicken broth
4 carrots chopped
1 lg onion diced
4 celery stalks chopped
4-5 garlic cloves crushed more or less depending on taste
1 large bag spinach

Mix it up, simmer for an hour.. Smells great, tastes delicious..

OH WAIT!!!!!!!!!!!!

1 box diateli noodles cooked.. add to soup when serving..

OH.. and don't forget the fresh shredded pecarrino/romano cheese.. otherwise known in our house as stinky feet cheese. :)























Strawberry Pie



This is a delicious dessert, that I first tried at a friends house in Pennsylvania! So thanks to Lisa who shared this with me.


1 9in unbaked pie shell

3/4 C Sugar

2 T cornstarch

1 C Water

1 (3oz) back strawberry gelatin

4 C sliced strawberries

Fresh mint (optional)

Bake pie shell @ 350 for about 30 minutes.  Then cool.

In a saucepan combine sugar, cornstarch and water until smooth. Bring to boil, cook and stir for 2 minutes or until thickened. Remove from heat, stir in gelatin until dissolved. Refrigerate for 15-20 mins or until slightly cooled.

Arrange strawberries in bottom of cooled pie shell, pour semi-cooled gelatin over top and refrigerate until set. .

Now you can eat just like that or add some homemade whip cream to the top! :)

Delish!!! Fresh mint for garnish! :)
